Steak Hotpot

Ingredients:

  • 3 large onions, sliced
  • 2 carrots, peeled and thinly sliced
  • 4 cloves of garlic, finely chopped
  • 8 large tomatoes, thinly sliced
  • 2 tsp dried mixed herbs
  • 400g beef skirt or other cheap cut of steak
  • Beef stock pot made up with 200ml boiling water
  • 4 floury potatoes, thinly sliced
This recipe will need a big dish.
  1. Preheat your oven to 180 Celsius/160 Celsius for fan/gas mark 4
  2. Spread one third of the onions into a layer at the bottom of the dish, along with half the carrots, half the garlic and half the mixed herbs.
  3. Add the steaks, so they fit snugly on top of the vegetables. Add the rest of the herbs, the the carrots, garlic and tomatoes.
  4. Add the remaining onions and pour the stock over the top.
  5. Arrange the potato slices on top so that they are slightly overlapping and covering the vegetables and meat.
  6. Cover the dish and cook for 2 hours. 
  7. Remove from the oven and uncover. Return to the oven and cook for a further 20-25 minutes.
  8. Remove, cover and rest for 10-15 minutes.
This dish would be lovely with some cabbage, greens, or other seasonal veggies. This is a dish that will really warm you up on these horrible short nights!
